Monte Cristo Sandwiches

If you are like me, you are always trying to come up with great ideas for the leftovers from Thanksgiving.  Well the recipe below is a great way to use some of those items for a hearty meal.  These hot sandwiches have been around form years and are a yummy way to switch up a boring breakfast.  Enjoy!!

Monte Cristo Sandwiches

 12 slices thick sliced sandwich bread

8 slices Swiss cheese

8 slices cooked ham

8 slices turkey

1 cup cranberry sauce

1 cup baking mix

1/4 tsp. nutmeg

2 eggs

1/2 cup milk

Vegetable oil for frying

Warm maple syrup

 Assemble sandwiches starting with one slice of bread, then a slice of ham, a slice of cheese and then a slice of turkey and one tablespoons cranberry sauce; place one slice of bread and repeat with ham, cheese and turkey and cranberry sauce, top with a slice of bread to make a double decker.  Secure with toothpicks.

 Heat oil in frying pan on medium.

 In mixing bowl combine baking mix, nutmeg, eggs and milk.  Stir until a thick batter is made.  Carefully dip prepared sandwiches into batter on each side.  Place into heated oil in fry pan and brown on each side.  Set on to platter covered with paper towels to drain off any excess oil.  Remove toothpicks and serve with warm maple syrup.   Makes 4 sandwiches.
